I currently have a 4 year old Gigabyte GTX 1080 G1 and it runs at 80C under 100% load with the clocks generally between 1980 and 2050 MHz. My fan curve is already quite aggressive and I would like to cool it down a bit so I might be able to see a more reliable clock speed. I have experience taking apart electronics but I have never taken a graphics card apart. Do you think I could increase the temps by 5C+ if I would replace the thermal paste on the GPU?

I think you could DECREASE temps by a few C using a good thermal paste. You will likely void the warranty on the card doing so, however. You need to be careful on the warranty. :)

The warranty has long expired since I got it in summer 2016. I know there is always a risk of damaging it as I replace the thermal paste so I wanted to know if theres a general consensus as to the quality of the stock thermal paste on this card.

I don't know offhand... sorry. I'd imagine with a good high-end paste you would see some improvement. Exactly how much, not sure.
