i have plenty of space on my disk so i just tell it to install everything (cause you never know what you'll want or need)

True, it may make your life easier, if you have to deal with dependencies and such. However, you will probably have a lot of unneeded services running, so you ought to take care to shutdown the ones that are unused. Otherwise, you might end up with security issues.
