Help with mobo selection

Building a new system here is what I'm planning:

Mountain Mods U2 UFO case w/scythe fans
e6600 C2D
Corsair XMS2 DDR2-800 4-4-4-12
2 X WD raptor 36gb in Raid 0
2 X WD caviar RE 250gb in Raid 0
evga 8800GTS
PC power & cooling silencer 610w psu

Processor and gpu will be under water so I will be overclocking.

I need help choosing motherboards. I dont know if I should go with the new 680i chipset such as the striker extreme or evga 680i mobo, or if I should go with an intel chipset board such as the P5B deluxe.

I will only be using one graphics card for sure, and was leaning toward the P5B deluxe due to the matrix raid option, but I am new to selecting mobos and was wanting some suggestions.

If you were building the system that I am what would you go with and why? Will the psu be able to get the job done with what I have up there?
 
if you dont plan on sli or cf the you might go p5b-dlx. imo with a e6600 you want a nv680i or 975x mobo. evga's nv boards are clocking nicely to 500+mhz fsb, @259 at newegg you cant go wrong. should you choose no cf/sli and want to stick with intel chipsets get Abit aw9d-max/aw9d , asus p5w-dh. those are about the only 975's i see suggesting based on cost/ocing.
