How to bypass HSF Rheostat?

I have my case fans controlled by my rheostat baybus but want to control my hsf fan speed w/ another rheostat.
Problem is, I want to be able to turn the rheostat on and off.
Meaning, have a constant 12v supply to my hsf but w/ a switch or relay be able to use the rheostat.
This is mainly a precautionary measure in case someone in my household lowers the speed too much and my cpu gets fried.
Only want to use the rheostat when I'm using my system.
Any suggestions?
