How to convert resistance to a temperature

I have a 10kohm thermistor hooked up to a multimeter, I don't know if it is NPC and PTC but I can figure that out easy. How would I determine the temperature reading?

test it at a number of points to develop a curve
note that it will NOT be linear

hook it up and get the resistance, then put a match near it, not too close or you will damage it. Hey, you could even try putting it real close to a light sorce like a desk lamp. Watch the multimeter to see what it does. That should help.

I used that to figure out what the values were for the JMC thermo regulater fans. I cut the resistor (15K) and soldered in a small potentoimeter just like the Enermax fans.

BillA is right. Most manufacturers will gladly supply you with a R/T performance curve for their thermistors. Here's one I posted a while back:
