The V2000 is sooooooo awesome, especially when you through in a Jinu SS at the bottom. If you want a really nice case lian li is the way to go, and the v2000 is great.

I own a V2000, and it has proven to be an excellent case. Very easy to work on, tons of space for water cooling, and excellent airflow. I removed the lower HDD mounts to fit my radiator and pump, but purchased a 5.25" 2-bay enclosure to hold three HDDs with an 80mm fan.

(you can also get this in black, and in a model that holds 4 HDDs with a 120mm fan).

Silence is the best! go for the second one!

The V2100 has this full frontal door, which may block a bit of sound, but it comes at the cost of decimating airflow from the front intake fan. Not a great trade-off in my view. You could simply run the fan at a lower speed and maintain proper airflow, thereby reducing noise.

How quiet is the PC-V2000?
As "open" as the case appears I wonder with 3-4 fans and a power supply fan running .
I plan on using all 120mm fans. My Scynthe Ninja HS has a 120mm fan as well.
My cpu temps in my current Antec case now run at 38c idle and about 50-60 at full tilt load. PwMIC runs at 38 idle.

The only answer I can give is: It's as quiet as the stuff you put in it.

Indeed, the case is quite open, so you should take care to take advantage of that fact and minimize the number and speed of fans. I am planning on using a V2000 for my next build and I want to have only 3 fans in the system: one on the radiator (I'll be using watercooling again), one on the backpanel, and one in the power supply. The watercooling will cover both CPU and GPU and the backpanel fan is for providing airflow over the passive mainboard sinks. I think I can have the fans running at a reasonably low speed so that the noise they produce should be fairly limited. Of course, it will not be as silent as those same fans in a padded steel closed case, but on the flipside, they are likely more able to keep things cool aided by the free flow of air in the V2000.
Harddisk noise, even if they are soft-mounted, is likely more noticable. I personally do not mind seek/write noise, but a constant high-pitched whine can be a pain. I'm hoping that the disks I choose do not emit that noise and that whatever noise they do make is still drowned by the fans.
