I recently got a nf7-s v2 and a 1700+.
I've been trying to do some overclocking and this board
overclocks great. Only one problem, though. If I set the vcore to 1.85v the BIOS resets to the defaults. I have a watercooling
system that keeps the temps low, so I don't understand what
the MB is doing.

Has anyone else seen this happen?

I mis-stated earlier. This is the actual sequence.

I am running 11.5 x 200 @ 1.825 vcore.
If I push it higher, I get errors in memtest86. So, I tried to
increase the vcore to 1.85.

At the next system post, the system will halt during post and
sound an alarm, that sounds kinda like a old timey police car.
After that happens, I have to disconnect the power from the MB
to get the system to reboot. At that point, no matter what I set
for cpu and memory speeds in the bios, the mb will reset to the
default cpu and memory speeds.

I tried the lastest bios from abit, but it made it worse, because
I have another problem where the corsair memory was
programmed with the wrong settings from the factory. But that's
another story.

System:
WinXP Pro SP1
DirectX 9 and Cat 3
ABIT NF7-S v2.0
Athlon XP 1700+ Tbred @2300 (11.5*200) Vcore 1.825
2x Corsair XMS3200 Cas2 (2-2-2-6) agressive cpu setting
Radeon 9500 Pro @(350cpu,297mem)
using on-board sound, nvnic, usb
Wester Digital 80GB 8mb WD800JB SE
Adaptec 2940 Ultra
Plextor 40x CD
Yahama 4260 CDRW
Antec 400W ps
 
A lot of 1700 DLT's don't like to run over 1.85...especially the W's...try 1.875 and 1.9...if you have good enough cooling...if it still does that when trying those voltages...odds are you have reached your CPU's voltage limit...
 
Before I got the NF7-S, I had an A7N8X with a 1700+ DUT cpu
and ran it at 1.95 vcore with no problems. I tried that cpu on
the NF7 and at 1.85v, the same thing happened.

glock19 - I was thinking the same as you, but now I am wondering if there is a problem with this mb.

I sold the A7N8X, maybe I should have kept it.
 
Your NF7 is telling you it doesn't like those settings and it won't run on them. The earlier boards bios were known to crash from this, yours is giving you a chance to go back to the bios and try other settings by starting up in a mode it can run on. I would guess that you have found a voltage setting that won't operate your CPU.
