questions on this LED thingy

Its been a LONG time since I dealt with electronics so bear with me. Would I be able to hook up, say, 8 LEDS to that kit instead of 4? By wiring 2 LEDs together, and then placing them onto jumper1 and so forth?

That's correct. All you need to do is connect the two positive leads together and connect the two negative leads together.
