I'm thinking of getting either the mag drive model 3 or 5, or a Maxi-Jet 1200mp. I know the maxi jet you can adjust flow rate, but what about the mag drive?

You can adjust the flow rate of any pump by using some type of valve. Just put a 1/2" ball valve inline with the Mag pump and you can adjust it to whatever you want.

A lot of the Danner Supreme Mag Drive pumps have adjustable flow rate. Best bet is to look up the specs before you buy.

None of the ones I have have any type of adjustment on them. I have two mag7's and a mag3. To be honest I haven't seen any type of adjustment on any of them unless this is something very new (like within the last month). See here for more info.
