So what exactly does Svchost.exe do? And why must it consume so much ram? With Aero running, and the sidebar running with a few gadgets in it, my machine boots up, and is eating up 1.8gb of ram. Theres also 13 instances of Svchost running..

What does it do and why does it consume so much memory? By itself is taking over 300mb..

You can use a program like Process Explorer to see what a given Svchost.exe is hosting...

In Process Explorer click on View--> Show Lower Pane, then View--> Lower Pane View--> Dlls, and PE will show everything about a Svchost.exe or any program you see running, and what that particular program is hosting. You can also right-click a line in the upper pane for a running process and go to Properties, where you can get more information about a running program. You can right-click in the lower-pane also, in order to see the properties of a program that's being hosted by a running program in the upper pane.

Also if Svchost.exe is not running out of the %systemroot%/System32 directory, then it's a Trojan.
