I already have a decent WC setup, but if I decide to add a pelt or two, will I have to buy a new WB with attached cold plate, or can I make my own cold plate and attach it to my current WB(DD Maze3)?

I believe, (Don't know for sure.) that the basic Maze 3 doesn't come with the threaded coldplate mounting holes. Can you confirm this?
If it does come with the mounting holes, you could contact DD about buying just the coldplate.
You can certainly make your own. You would probably want to drill mounting holes in your Maze though. You need about 200 PSI of clamping pressure on the pelt.
