As topic asks: Will Mosfet heatsinks take care of .05vCore undervolt? This is freaking strange if you ask me...I have it set to 1.850 just to get it to 1.808V...
Then it 'spikes' up to 1.824V...i doubt i can get stable with wild behavior like this

Would something like this be worth the money / do what I need?

Keep in mind that software used to monitor voltages/temps is not always accurate ;), so in fact you may not flactuate at all.

I used Abit EQ, CPU-Z and Central brain identifier to check the voltage. All of them showed the same stinking undervolt.

Then maybe your mobo is undervolting the voltages by default (my EP-8KHA+ overvolts like hell ;) ).

Yeah, my NF7 overvolts by .02V even with mosfet cooling. Still having the sinks there gives me peace of mind, since my fsb is over 200 and my vcore is so high.

since you're using software to monitor the voltages I wouldn't worry too much. However if you're doing any serious overclocking, sinking the mosfets will only help.
