Has anyone seen SATA cables that light up with LEDs instead of the ones like this I have had bad luck with the inverters in the past.

I have personally never seen these, however Theres two alternative things you could do here.

1:- get UV sata cables and put a uv cathod in. therefore no inverters on sata cables.
2:- get led strips and use some double sided tape and tape them too the sata cables.

both would work, i have used uv sata cables in the past no problem, and i have a lamptron 12" cathod kit (1 blue, 1 uv) and it lights the uv sensitive components up nicely.
 
Yeah, I'd go with Jameseboy said, get UV reactive cords. If you're really dying for bling, get an LED Strip. (Read: Repurposed Christmas lights)
