To go back on topic, the 3820 OC very well, as it's the X79 platform and you can OC through BCLK.
It might be a bottleneck@stock (3.6GHz! and I don't even think it will be) with a 680SLI or 7970xFire
But I agree, a 2500K with a z77 MoBo is a better choice: Cheaper and as effective (gaming wise).
You want the x79 only if you plan a 6 cores/12 threads upgrade in the future, and want the quad channel DDR3.
