In the interest of cutting costs at my work, are there any pitfalls in installing Server 2012 R2 in a virtual environment?

Server 2012, R2. 5 CAL. Virtual environment is VSphere, with 3 dual quad core processor boards.

Role as file server. We already have one file sever, and this should occupy the same role. The other server has been allocated 2 cores CPU, 16GB RAM. OS drive space 150G, storage drive 900G.

Once the environment is set up, anything other than installing the OS, the CALs and applying patches?

I don't think you should have any problems. Windows Server OSes run very well in a virtual environment. Will want to install vmware tools as well I assume in the OS so that you have access to the 10gb vxnet3 NIC.
