Just wondering as I am putting together a new pc build, is it worth it to get a motherboard with quad channel ram capability over dual channel boards?

Is there any difference between quad and dual channel ram, and if so is it negligible or noticeable (pertaining to gaming)?

No differences in gaming. The platform you are leaning towards (4770K/Z87) is dual channel only anyway.

Yes. A more affordable hex core is 4930K. It is 100Mhz slower and has a bit less cache. Not remotely worth the $450 price difference, note.

Just curious, what exactly does quad channel provide over dual? Are there pro's and cons to each or is quad always a better choice?

More bandwidth... Think of it this way... which could get more water through itself, a garden hose or firehose?

Now to put that in perspective, let's use that same analogy but add flow rate into it. So let's say your spicket is 1GPM flow, your garden hose is good to more than that, your firehose obviously way more than that. If the flow rate (data) remains the same, it doesn't matter what hose is attached it will still flow as fast as the spicket (cpu) can dish it out.
