Custom fan control, power/reset button, temp mon.?

How would I go about making a custom fan controller that could control just one fan.?

I am looking into building a custom front block type thing for my case and I am going to have to find some power buttons as well. Got any tips on this? I already have an old Temperature probe that has some LCD thing going on

something like a Rheostat , you can hook one fan to in and control it
