Intel's marketed temperature 'limit' is 65c. That's for a non-overclocked CPU on the stock cooler, of course.
 
for instance i changed the FSB to 300 x 7 and the cores went up 56C, so i cannot overclock high as such on a stock HSF?

They both read from the one and only sensor, but certain programs (Speedfan, eg.) simply aren't meant to read a DTS (Digital Thermal Sensor) found on Core 2 Duo.
