I am currently overclocking Gigabyte GTX 560OC. Using MSI afterburner.

Stock running at - 830Mhz Core Clock
- 1660Mhz Shader Clock
- 2004Mhz Memory Clock

I pushed the CC to 900Mhz and Shader to 1800 and Mem Clock to 2100.

On stock voltage, using 3DMark 11 Pro test (720p) i got 67C max temp. How far do you think I can push it ?

thermal threshold for 560ti is 99C.

try to get ~1000/2000 on the core/shaders and ~2250 on the memory

actually that may not be a Ti in which case it may not clock as high. If yours acts like mine you will run into a core clock wall far before temps become a concern.
 
I need more cooling on my card to push it any further, but i'm satisfied at 925/2220/1850 especially on this rig. That's from 783/1804/1566.
I saw the most improvement on my card through raising the memory clock
