I would go 295x2 or 2 290x. I wouldn't go Nvidia on this generation due to its 3GB vram, and I surely wouldn't do 3 cards as scaling (% increase you get from adding the 3rd card) is not nearly as good as with 1->2 cards.
That said, if you want to lower AA (as at 4K you dont need as much to remove the jaggies) and such, a 3GB Nvidia card could be a solution...

You want the most horsepower you can get. As I said above 2 290x's or 1 295x2. the 290 isn't in here and is around 10-15% slower than the 290x....
