piecing together a budget rig as follows:

AMD 955BE
Asus M4A88T-V EVO
MSI reference GTX 580
8gb patriot viper
2 500gb HDD and one 60gb SSD

Is a corsair CX500 enough to power this rig? I might do some mild overclocking on CPU and GPU

Easily enough and with it overclocked all you want.
 
Mild overclocking it's just fine. Serious overclocking I would get something bigger. 580s can eat an awful lot of power when you lean on them.
