Let's not forget this graph from your link to skinneelabs, which shows all of the blocks referenced (and more) up to ridiculously high flow (in excess of 3.5GPM, 4GPM in the case of the Sapphire). The difference between average flow (~1.5GPM) and crazy flow seems to be ~1°C, with max being ~1.5°C.Ek supreme HF, heatkiller, and apogee Xt are only 2-4C lower temps than the Enzotech sapphire according to those that have tested both, and that is at OCed settings, the difference would be possibly less at stock (lower TDP) settings):

And most of those 3 have taller pins (thermal advantage) + jet plates professionally designed and optimized.
So Spitter3, if you improved the Enzotech Saphire by 7C at stock load settings, then you have taken that mediocre performing waterblock and made it at least 3C better than heatkiller, Supreme HF, and Swiftech XT, in other words, you have by far the best performing block on the market, that is if you improved the design by 7C.
However, all the other blocks when changing jet plates, from worst to best jet plates, only change temps 1-2C.

My guess goes to a better remount after doing the mod
I have that enzotec block myselve and i really doubt that you'll be able to improve it with 7c but if you have managed so plz post pics of the mod so that others too can do the same mod
