i've seen so many pics of water copper blocks... but how does water go inside them???? i see no holes at all!!

Hmmm are you looking at a copper block and not a water block?
If you look, at water blokcs, most have to hose barbs and some have 3.

You are correct a copper block has no holes till you machine it.

most likely you've just seen the copper bases. almost every waterblock has the hose barbs mounted in the top, which can be made a variety of ways.
