Where Do I Start to Goose up My RAM to Match its Rated Speed (or Faster)?

I should be getting 1866 out of these sticks, but here's what I see in the BIOS:

Use the Extreme Memory Profile (XMP)

Yep, I worked that out last night at about 0400. ;)

Appears to work perfectly.

My only problem was confusion about memtest's reporting 1600mHz speeds, though the BIOS and diagnostics were saying 1866mHz. Still not clear on what that really means (or not).
