Memory profiles, programmed timing tables etc. Can be many things. Usually SPD profile is the same for all memory modules as it has to be compatible with JEDEC standards. XMP depends on manufacturer and how they tested it later.
Some memory kits have incorrect list of sub timings to work on some platforms. Some are tested on motherboards where you don't have to adjust IMC voltage or anything else. Later XMP profile is not adjusting required settings.
