Keeping an eye on temps and fan controls

What would be the recommended app for watching temps and fan controls with my current setup as in the sig running windows 7? I have the Asrock Extreme Tuning Utility and one called Core Temp 1.0 RC6. But both always show something different. Here is a screen shot of the two.

I don't thing there're any apps for fan control, if the fan or fans that you use in your case have a speed control, connect them to your motherboard and adust the fan speed in the BIOS or buy a 5.25" fan control.

I will purchase a fan control with temp readings i reckon. What is the most accurate way to keep an eye on CPU temps though?

After checking into both of those it looks like they only support Intel.
