Can one RAID controller suport mulitple RAID 0 arrays? ie I want C: as one RAID 0 array consisting of two WD raptors and D: as another RAID 0 array consisting of two maxtors?

If I put them all as one massive RAID 0 array the raptors will become as slow as the maxtor HDs so I dont want to go down this path...
 
Most motherboards with RAID 0 and 4+ SATA ports should support multiple RAID arrays; you shouldn't have any problems.
