I recently setup two SATA drives in a raid 1 (hardware) configuration.
The only way I see that the two drives are mirrored is when the computer boots up.

Is there any other way to see this setup within windows to see if it is indeed working?
 
you will probably have to get a specific program. I work @ IBM and we have serveRaid Manager that is a gui for our customers to see whats going on with their drives. I see that you have asus boards and a msi, you can probably google it and see what you come up with. The answer to your question is yes there is software out there that will manage and show you stats on your array, you just have to find it :)
 
theres usually a program installed with the NVRaid drivers for windows...cant think of the name of the .exe ATM. i didnt install those drivers on this last format
