Just wondering what type of PSU I should purchase for getting a 2nd Radeon HD 7850. I currently have a 520watt Antec Eco PSU, but it does not support Crossfire.

You'd be fine just using a Molex-PCIe power adapter and using that PSU. 7850s are only 130w TDP, so 260 from two of 'em, 130w or so stock leaving some spare OCing room still.
If you do want a new PSU (like if you plan to do some solid OCing on both cards and your GPU) look for something in the 550-750w range on this list: http://www.overclockers.com/forums/showthread.php?t=589708
Also check out the reviews on Overclockers.com, funkykit.com and jonnyguru.com.

What's your budget?

Don't really have a budget, I found one for $200 that had a lot of good reviews on newegg a while back but haven't decided what one I want. Unless that adapter you are talking about would work.

You mean something like this? http://www.newegg.com/Product/Product.aspx?Item=N82E16812706017

If you have the cash, I'd grab that Seasonic piece and have at it. That'll give you lots of extra power for serious business OCing if you decide to. Plus it's an epic power supply anyway.

Yea I might go ahead and grab that to be on the safe side, because I already OCed my CPU up to 4.0Ghz and my current 7850 is sitting maxed all the way out using ASUS GPUTweak.

Appreciate the help

Yup, but not with very low ripple, 0.23% regulation and 80+ platinum.
Functional difference? Minimal, really.
Theoretical difference? Hard to say.
OMGOMGOMG THIS IS LEIK Z()MG difference? Huge.

It could be argued that a single big GPU would beat a bigger PSU and a second 7850 in performance of course.

Well I just have picked up this 7850 and it preforms pretty good with me so far, I really like it. So really bumping up to like a 7900 series probably won't be happening.
