I just bought some MX-2 for my new build and I'd like to use the leftover MX-2 on my laptop. I have a Gateway (forget the model # off the top of my head). Is there any difficulty or trickiness to doing this? I've never opened up a laptop before.

It takes me about 3 hours to full disassemble my Toshiba laptop and put it back together. I haven't taken my Lenovo apart, so I'm not sure on that one.

Laptops are compact and difficult to take apart -_-

Some definitely are, others not so much. I haven't tinkered with the insides of my Lenovo x200 aside from adding memory but my old Gateway P-7811FX and P-6860FX both had extremely easy access to the CPU.
