I'm working in a smaller office under 40 users and I'm running into problems with all the users printing color

they all have the print drivers loaded locally

I'm not to the server world but would it be possible to set up a server to "share" the printers in the office and default them to black and white there?

if so what do software would i need (other than the server software?)

Any of the windows server software will work with print management feature/role turned on.

Some printer manufacturers publish software for just this type of thing.. they allow you to customize the driver to your specifications and then push that driver to users' computers. Some printers probably have this sort of customization built. Best thing to do would be to look into your exact printer and figure out if anything is offered.

Or remove the color cartridges.
