I am now doing a major hardware upgrade and will be giving away my 1155 mobo and memory to a friend. I can give him either a i7-2600K Sandy Bridge or a newer i5-3570K Ivy Bridge. Which would be the better processor given a choice between the two; the older i7 or the newer i5 or does it really not make any difference?

Depends on his usage.

Also, you can likely sell the 2600K for more than the 3570K.

If what ever the machine is used for can utilize the hyperthreading of the 2600k it is the better choice, if it primarily doesn't then the difference between the two will be negligible.
