well, whaty kind of computer graphics, 3D or general, for applications of 3D graphics, nehe.gamedev.net and www.gametutorials.com are pretty good sites. I also recommend www.gamedev.net.
Alas however, these are just applications of gaming graphics.
Modelling protein folding i.e. F@H is an example of an application of graphics if you get the non-console based version(s).
