I have a Pentium III 500 which i have overclocked to 560 but i want more and i can't get more, please help if you know anything i can do to get the most out if it!!!!

I'm sorry to break it to you but your 500 slot 1 is a Katmai core which is horrible for overclocking!

So it usually goes 575-600 tops!

as high as i could get my old 500 was 680

Could be an exception, maybe you had your L2 cache disabled because Katmai and the cache latency don't work that good together and if you set the fsb too high cache may crap out.

The Katmai's L2 cache ran at half of the processor's speed. My P2 450 was only able to 558 even with the cache disabled, but it wasn't worth it, so I bumped it back down to 539 and reenabled the L2 cache. I'd say you're about stuck there.
