How Disable Edge? - How Enable Adobe Reader?

I am using my MS Surface Pro as a test bed for Windows 10 and it repeatedly reinforces my dislike of W10 and strongly reinforces my desire to continue to use W7 (that wont work on the Surface Pro).

Latest problem: MS Edge is the default PDF reader. I want to make Adobe Reader the default but it wont let that happen. Any fix for this?

Settings -> System -> Default Apps -> Choose default apps by file type -> search pdf and change

Or right click mouse over the file and pick open with...
