I just started getting into Hyper-V. I just found out that there are two ways to get a server running. Windows 2008 server with Hyper-V and a dedicated Hyper-V server. I can't seem to find a management client for Windows 7. I know Windows 8 has it built in, but that does not help me right now... Any help would be great..

I've done both, but as of right now I have a dedicated Hyper-V server running..

I don't believe there is anything for windows7 what you can do is rdp onto the server or into each of the vms once they are setup.

Nothing wrong at all, just from personal experience, Hyper-V is behind the trend that VMware has set with VSphere, and Red Hat with KVM.

However many large corporations are swinging to an all Microsoft environment and they want to get away from VMware.
