I always had good luck with double sided tape and windows. I think what you picked would work out great. My only suggestion is NOT to use the foam double sided stuff. It does not work at all.
you REALLY want to do epoxy and make a continuous barrier, dust is a ***** and the lexan or w/e u use attracts dust and it will slide in through the opening of the glue, i really suggest you dotn use tape if someone psuhes you xbox or carries it holding the window side it will pop the corners out and it will become unmounted, i have experince i modded mine also

(i took out the power connector of the intercooler and covered the hole with a small square of lexan(i used silicone for than not epoxy)
yea i modded the intercooler to be right over the heatsink i cut the lexan and i used usb to power it, which didn't go too fast....... i tired 12v but my 360 wouldn't turn on
The foam tape or the flat paper with adhesive on either side...It's all about the prep. Make sure to clean both the case and the window with clean cloth and alcohol before applying the tape. I use those little pre made prep pads before I mount anything this way. Even the oils from your fingers will prevent that adhesive from grabbing properly.
The foam tape will fill in any small gaps, but that is also it's downfall. It will create a small gap between the two pieces. If the mounting surface is fairly flat, I'd go with the flat(non foam)tape.
I'm not really an expert here so I hate to say which one for you to use with absolute certainty. Judging by what you are planning to use it for, the one you listed at first would be a good choice. The main thing is to make sure that the surfaces are both clean and flat(as in no big bumps or lots of textured surface).
