You ask several questions:
1) Is a 2 card SLI system really faster than a single 6800GT or X800XL?

Even if the answer is yes I am not sure that is the question you should be
asking.There are a lot of factors that are important in deciding if you need sli.
For example:when you play games for sli to really help you sli has to have a game profile set-up.If the game or games you play don't then sli may not give you added benefit when you need it.Perhaps you should be asking what is the right card for me.This article might help you get pointed in this direction:

2) The MB you listed has a mod available that allows modders to run sli on that MB.Is this your plan?
