Good call and seems like you researched enough to make a good decision.
You can realize the full potential of *most* 2600K's on good air Maybe when the 6 core Sandy Bridge chips come out you'll once again need water.
I say if you want "high end" cooling without getting wet, skip the H50/H70 and get a Noctua NH-D14. Big cooler but even at full speed the stock fans are very very quiet and it will tame a 2600K at 5GHz no sweat. All for less than an H70 too
