I need some advice please guys, I am building my new system which is going to be the dog's nut's What i have ordered so far is....

MSI GeForce GTX 280 1024MB GDDR3 TV-Out/Dual DVI (PCI-Express) - Retail

XFX nForce 790i Ultra SLI (Socket 775) PCI-Express DDR3 Motherboard (MB-N790-IUL9)

Intel Core 2 Quad Extreme Edition QX9650 "LGA775 Yorkfield" 3.00GHz (1333FSB) - OEM

OCZ 2GB DDR3 PC3-16000C9 2000MHz Platinum Enhanced Bandwidth (2x1GB) Dual Channel DDR3 (OCZ3P2000EB2GK)

Coolermaster Stacker 830 Evolution - Nvidia Special Edition (No PSU)

That is whats on its way to me, as you can see I want a good system but im a little stuck now, I cant decide on the following parts....

An OS ( best for games)
PSU i am thinking 850w with SLI
HDD maybe 1500 or 7500 rpm not sure on size or brand buffer size? or how many drives, RAID 0???
Optical drive not botered about blue ray my PS3 can do that.
Heatsink copper? water cooled?
Sound card?

And as for over clocking well i would give it a try but i dont want to shorten the life of the CPU too much.

Any advice on which to get would be great
