2x8GB just because you can use more sticks ( upgrade later ) but all depends from board. Older boards are not supporting 8GB sticks or sometimes are problems with compatibility.
 
Judging from one of his many threads, he is getting the Asus Z77 Workstation board. He will be fine with 8GB sticks on that I would imagine.
 
The board you're getting is critical.
For most boards, two sticks of memory is enough to take advantage of the dual channel capability and in that case 2x8GB will give you the speed you want, and allow you to expand further in the future. However, if you're getting a motherboard that supports quad channel memory (P9X79 WS is an example of such a board), then getting the 4x4GB memory sticks would be faster, but at the cost of consuming an additional 2 memory slots.
