I realize this probably comes off as both lazy and cowardly, but I'm really scared of frying something/everything.

I've read the guide to OC'ing i7/i5/etc by Miahallen about 5 times, but I'm still feeling reserved on the subject of overclocking. If someone could give some safe voltage ranges (VTT, Vcore, VDimm, etc.) that would be enough to get me started. Conversely, if anyone has a the same board/CPU and would be willing to share their BIOS settings, I would be very grateful!

Until you get more comfortable w/ overclocking, try using one of the OC Genie presets. I think the highest available preset allows for an overclock of ~800MHz to 3.6GHz. The only problem that I know of w/ Genie is that the presets somewhat overvolt Vcore, VTT (necessitated by a high BCLK w/ a low CPU multiplier), and Vdimm. Then once in Windows, you could use the MSI Control Center to view the current voltages, timings, etc. that were altered by OC Genie for a particular clock. Then write down all of the current voltages, disable Genie and manually adjust the voltages to a somewhat lower level at the same clock (you're looking for a Prime or LinX stable overclock, by applying the lowest voltages necessary). You could then manually adjust the DRAM timings, and the BCLK / multiplier to match the same stable clock but applying a different bus frequency.

I've tried the OC Genie function and it only serves to repeatedly crash during boot up. When I go into BIOS afterwards, a lot of my voltages are sky high and I'm running at around 65C. I've read a lot of posts from people saying they've had similar problems with the OC Genie function (I'm running BIOS v1.5). As far as I know the bclock isn't even upped when I do it either.

**EDIT**: Also, I was wondering if setting my RAM timings to 7-7-7-24 would be alright? They come spec'd at DDR3-1600 from G-Skill, but according to Intel's website, the i7-860 is only spec'd to handle 1333. Thanks!
 
In order for your RAM to run at it's rated 800MHz (DDR3-1600), it needs to be overclocked from the default of DDR3-1333 (x10 multiplier w/ a BCLK of 133MHz). Just change the DRAM multiplier to x12 (or DRAM Frequency to DDR3-1600) at the default BCLK, and manually adjust the timings and voltage to 7-7-7-24 and 1.6V.
